Tangy Tomato & Tofu with Fish Sauce
Another gem that was lost in Draft, mom's almost vegetarian sweet and sour tomato and tofu dish.
Ingredients:
2 cakes of fried tofu (or buy the regular and fry them yourself), cut in half then sliced into 4-5 equal rectangular slicesDirections:
2 medium ripe tomatoes, cut into rough chunks (don't have to seed if you're not inclined)
half an onion, sliced to approximately 2 cups
4 cloves garlic, minced
1 tbs fish sauce
1 tbs sugar
1 scallion, sliced to approximately 1/2 cup
oil
1. Heat up pan or wok with oil over high heat.
2. Add minced garlic. When golden, not browned, add onions. Stir for a 1 minute.
3. Add tomatoes and tofu. Turn the heat down to medium-low.
4. Add the fish sauce and sugar. Cover the pan and let it cook for 5-7 minutes until the tomatoes have softened significantly but not completely broken down.
5. Taste for seasoning. Add a touch more sugar or fish sauce if needed.
6. Toss the scallions in and stir into the mixture a few times.
7. Turn off the heat and serve.
