Shrimp & Mushroom Banh Cuon- Vietnamese Savoury Crepes

Banh Cuon is usually filled with ground pork, but in lieu of shunning meat these days whenever possible, I've tried making my banh cuon with 2 types of fillings re-cently- a vegetarian gluten & mushroom and a shrimp & mushroom. Below is the recipe and accompanying photos for the
batter filling.

As with all meals that accompany nuoc cham or fish sauce dipping sauce, 50-60% delicious 
points depends on the fish sauce. According to my parents, making the fish sauce dipping 
sauce is an art. I personally wouldn't go that far, but I have tasted a pretty number of 

atrocious and/or inconsistent homemade and storemade sauces.
